This truffle it is known as Perigord Truffle because at the beggining of twentieth century France was the main producer in the world. Nowadays 90% of the production of this truffle mushoom it is produced in Spain in winter time. From November to April Spanish truffle it is sold around the world.
Once the winter season it is finished in Europe, from May to August we find from Southern Hemisphere Australian truffle and South American truffle.

Tuber Melanosporum's Quality
"Extra": 95% of the skin without imperfections and regular form. Known as golf ball.
"First": irregular shape and 80% of the skin without imperfections.
"Pieces": split truffles that only part of can be sold as fresh.
"Small truffle": specimens of 8 to 20 grams per unit.

15 November - 15 December: Average maturation - low price
15 December - 25 December: Average/high maturation - high price
25 December - 31 January: High maturation - low price (This is the best moment to buy melanosporum truffle!!!!)
1 February - April: High maturation - Average price
The truffle from Australia or Chile it usually comes at a slightly higher price than the winter campaign in Spain. Likewise, the quality and aroma are equal or even better than our domestic production.

It is shipped with a polystyrene packaging designed to guarantee the highest quality, aroma and freshness, without breaking the cold chain throughout the shipping process. It is delivered in 24h throughout Europe for orders before 14h from Monday to Thursday. Orders from Friday to Sunday are shipped on Monday.
