Custom Truffle Production for the Food Industry: The Laumont Method

A customization process designed for R&D teams

It all begins with an analysis phase. If the client is already working with a truffle-based product, we ask them to share the details—or even send a sample—so we can evaluate it in depth. From there, we propose improvements, typically focused on raising the quality standard, improving texture or achieving a more balanced aroma.

For companies that are starting from scratch with truffle, we send samples from our industrial catalog so they can run internal tests and decide, together with their technical department, whether any reference works—or if we need to customize key aspects of the product: truffle type, aroma, texture, etc.

Once the sample is validated, we go straight into production. If the product is already in our catalog, we can deliver in less than 24 hours. For fully customized products, we align on a joint project timeline.

Variables we adapt to create tailor-made products

At Laumont, we work exclusively with 100% truffle-based products, with no fillers or substitutes. But that doesn’t mean every product is the same. We can customize various technical elements to meet the client’s needs:

  • Truffle type: black (Tuber melanosporum), summer (Tuber aestivum), and occasionally brumale
  • Aromatic profile: natural or artificial, adjusting intensity depending on the final product
  • Texture: we adapt viscosity or grain size, and can add thickeners if needed to achieve a more homogeneous or structured result
  • Technical specs: we can meet specific parameters such as pH, viscosity, or particle size

Most of our industrial truffle products are packed in 1 kg tins or doypack pouches, but we can also produce white-label versions or supply customized documentation if required.

Industrial capacity and full control of the process

We have our own facilities—upgraded in 2024—where we directly manufacture all industrial truffle products. This setup gives us total control and fast response capability, even for large or urgent orders. Thanks to our truffle grower network and yearly stock, we can ensure a stable supply year-round, without relying on third parties.

We also comply with the most demanding food safety and quality standards. We hold IFS certification, which is essential to work with major players in the food industry, both within and outside Europe.

Frictionless logistics and export

Truffle is a delicate and valuable ingredient, and we know good logistics can make all the difference. That’s why we offer full support in export processes—from product dispatch to technical documentation preparation, certifications, lab analyses and customs paperwork.
