Truffle peelings are thin slices of high-quality truffle cut with the entire outer layer. At Laumont, truffles are carefully selected, handled and packed directly into tins in our truffle selection centre. Like all our products, this is a product that contains exclusively vacuum-packed truffles with their own juice and salt. That’s all.
Truffle peeling is used industrially when the customer wants the truffle to be visible in his product. Small slices of black truffle are ideal for a visible truffle impact on cheeses or meats, for example. As a manufacturer with more than 40 years of experience in the truffle industry, we can even customise the thickness of the peelings or offer you a flavoured peeling option.
We produce truffle peeling with black truffle (Tuber Melanosporum) and summer truffle (Tuber Aestivum). The main difference between the two is that Tuber Melanosporum has a more intense flavour and aroma than Tuber Aestivum.
